The real name of Chinese salt is Mono Sodium Glutamate (MSG), which was discovered in Japan and a company named Ajinomoto was the first to start its production. Apart from MSG, there are many other glutamate elements.

This group of food ingredients is represented by E-code and glutamate in the global food language INS (International Numbering System for Food Additives) from E-620 to E-649. Today MSG is mostly imported from China in India. About 10500 tonnes of MSG is consumed in India. Which is surprising. The thing to note is that 60 percent of this quantity is consumed in the unorganized market i.e. street vendors, restaurants, hotels etc. The daily dosage of any ingredient of glutamate is said to be only 6 grams.
